Crispy Fried Chicken ( KFC Style )

Vegetarians can try this recipe with mushroom , paneer ,cauliflower or halloumi cheese

You can substitute chicken with prawns

I made this recipe for two reasons ….let me share my second reason first…today I am very happy and relaxed as we got permission to launch our school website and start our registration process ….we were anxiously waiting for it and the first reason was my son Rayyan ,who is busy preparing for his boards ,every now and then ,he comes out of his room for a break and if I am watching TV then it will be food channel ,so he is forced to watch with me and the same time I was seeing this recipe ,innocently he turned and told me ….its long since you have made fried chicken ….

Came back from school and took the chicken for marination , mom knew I was doing it for Rayyan …..with a smile she said I pamper my kids a lot….my reply was that she was the reason why I am like this , when we were kids mom used to take care of all our needs and never said no to our requests …

As the name says ,chicken was crispy and enjoyed by everyone especially Rayyan and got vanished immediately ……it was nice to see Dad like it and said why do you buy KFC from out when you can make it at home ….


  • Chicken – 1 ( cut up to 12 pieces ) ( you can use boneless chicken

1st marination

  • Garlic powder – 1 tbsp
  • Chilli flakes – 1 tsp
  • Pepper powder – 1 tsp
  • Mixed herbs – 1 tbsp ( I used thyme, rosemary , oregano )
  • Salt to taste

2nd marination

  • Buttermilk – 1/2 cup
  • Milk – 1/4 cup
  • Egg – 1 no.
  • Chilli flakes – 1/2 tsp
  • Salt – a pinch

For coating

  • All purpose flour or Maida – 2 cups
  • Corn flour – 1/2 cup
  • Baking powder – 1 tsp
  • Garlic powder – 1/4 tsp
  • Pepper powder – 1/4 tsp
  • Salt to taste
  • Oil for deep frying


  1. Put the chicken pieces into a large bowl. Cover the chicken with water ,add 1 tablespoon of salt . Cover and refrigerate at least 2 hours or overnight.
  2. Remove the chicken from the brine solution , pat dry it and coat the chicken with the 1st marination and keep aside for 30 minutes
  3. In a large shallow platter,combine the buttermilk , milk ,egg , chili flakes and salt .In another platter sieve and add Maida , cornflour ,baking powder ,garlic powder, pepper powder and salt
  4. Dredge or coat the chicken pieces, a few at a time, in the flour mixture,then dip them into the buttermilk mixture and dredge them again in the flour. Set aside and let the chicken rest while you prepare the oil.
  5. Heat oil ,then working in batches, carefully add the chicken pieces 3 or 4 at a time. Fry, turning the pieces once, until golden brown and cooked through, about 10 minutes .
  6. When the chicken is done, take a big skimmer and remove the chicken pieces , shaking off as much oil as you can, and lay it on a tea towel or brown paper bag to soak up the oil. Serve hot .

    I took 30 minutes to make this chicken …
