Hariyali Egg Roast

Friday Family get together are always very special and end result is we all over eat and next day no one is in the mood for cooking or eating heavy food …. Dad never misses such opportunities and reminds mom of the dishes that are easy which normally she refuses to make for some silly reason but today when he told about egg roast , mom and I happily agreed as we were confused what to cook …..the real surprise for me was that dad likes this recipe more than the usual red chilli one and when mom shared the recipe , I had to ask her twice whether it was this simple to make

I was the first one to taste and my verdict was that we will end up eating more than one egg , told mom for sure kids will enjoy this dish ….when dad saw me clicking photos , he said that I have to roast the egg more ….was happy to get his opinion and told him I will roast little more for him when I will serve him for lunch


  • Boiled egg – 6 ( cut into halves )
  • Coriander powder – 1 tsp
  • Cumin powder – 1/2 tsp
  • Pepper powder – 1/2 tsp
  • Curry leaves – few
  • Oil – 4 tbsp

Make paste of

  • Coriander – 1cup
  • Onion -2 medium
  • Green chillies – 2 or more


  1. In a non stick pan add oil then add curry leaves then the paste , fry for 2 minutes and add all the spices along with salt and roast it till oil comes out of the pan
  2. Arrange the egg halves with the yolk side down and sprinkle 3 tbsp of water as the cooked masala can start burning and cook in slow flame for 5 minutes
  3. Slowly turn the eggs and cook for another 5 minutes and serve hot with rice and dal

Note : You can roast the egg masala little more time to get a crispy texture on the egg
