Its been years that Haseeb has stopped eating rice for dinner ,so my hunt for new recipes for parathas is never ending and each time ,I get a recipe of roti or chapati , trying it for my family is a must and best part after I make new type of paratha is the look on my kids face and then they start shooting questions about what is added so that they can decide whether it’s edible for them ….it’s easy to make Rayyan eat new dishes but very tough when it’s comes to Rasha , who refuses to accept anything new unless she is convinced with my answers…..
Personally I liked the amount of fresh greens added in the dough, best way to make kids eat as they can never guess what went into the Paratha …this paratha tasted good even with simple Dal , infact you don’t need any side dish with this paratha …
You can add spinach along fenugreek ( Methi ) to make it more nutritious and tasty …..
- Whole wheat flour – 11/2 cup
- Ghee or oil – 2 tbsp
- Cumin seeds – 1 tsp
- Fenugreek leaves – 1/2 cup
- Mint leaves – 1/2 cup
- Chopped Coriander – 1/2 cup
- chopped Green chili – 2 No.
- Salt to taste
In a pan add 1 tbsp oil ,then add cumin seeds , then add green chillies, coriander,mint and fenugreek. Saute till the water dries ,cool and grind it to paste
Take a bowl , whole wheat flour, salt, remaining oil mix and get crumbles then add green paste ,make the dough and if required the add little water and make medium soft dough.
Rest the dough for 30 minutes and divide the dough into equal portions with the help of dry flour roll it into Paratha
Place the paratha on a hot griddle and cook it on both sides, till it’s well done
