Back from vacation , there was no fresh coconut at home so couldn’t make coconut chutney , so the next option was making onion Chutney especially a easy recipe …One good thing about staying in Dubai is we get readymade Dosa / idli batter so I had only make this chutney and serve instant breakfast ….
This chutney tasted very good , the sweetness from onion and jaggery blended well with the sourness of tamarind and tomato ….it was liked by everyone especially by niece ,who had returned from Europe trip and was fed up of sandwiches , said the chutney tasted the best even without idli or dosa …
- Onions – 3 no. ( chop into big pieces )
- Cashew nut or roasted Bengal gram or sesame seeds – 50 gms ( I added little of all three )
- Tomatoes – 2 no.( chop into big pieces )
- Hing – 1 pinch
- Tamarind – small piece
- Whole Red chilly – 4 no.
- Jaggery – 1 tsp or small piece
- Oil – 2 tsp
- Salt to taste
- Oil – 1 tsp
- Mustard seeds – 1/4 tsp
- Curry leaves – few
- Red chilly – 1
Heat oil in a pan add red chilly, tamarind, onion, hing, fry the onions, are light golden colour, add salt, tomatoes and cashew nuts , cook for some time ,till tomato give out water ( 5 minutes )
Remove from fire and add jaggery, let it cool down and make a paste in food processor. ( don’t add water )
For tempering , in a small pan add oil , once oil heats add mustard , curry leaves and red chilly .Pour it over the chutney
Serve this chutney with idli or Dosa
