Rice Porridge ( Kanji )

This is one dish which I have eating from the time I remember eating food ……. Mom used to first make the broken rice at home ,by washing the rice, then drying it under the fan and grind it at home but she makes the plain one without any masala to which we used to add curd and enjoy it….After marriage I learnt this masala kanji from my sister in law Anees deedi as Haseeb used to like it this way even though it’s a longer procedure that is make normal one then add minced meat but when I see Haseeb enjoying it …..I don’t mind the time spent on it……I love the fresh mint added to the kanji ,which changes the taste if it …..

During Ramadan kanji is made all thirty days and my dad cannot break his fast without it and same goes for all the male members of the family but my kids don’t enjoy much , they prefer soup .Rayyan likes it but still enjoys soup to kanji ……

Ingredients

  • Broken rice – 1/2 cup
  • Moong dal – 3 tbsp
  • Finely chopped onion – 1
  • Ginger garlic paste – 1 tsp
  • Chopped Tomato – 1
  • Green chili – 1
  • Chopped coriander – 1 tbsp
  • Chopped mint – 3 tbsp
  • Cooked minced meat – 1/4 cup ( I have given the recipe below )
  • Garam masala – 1/2 tsp
  • Oil – 3 tbsp
  • Water to cook the broken rice
  • Salt to taste

Directions

  1. Heat oil in a pressure cooker, add onions and saute till it’s light brown . Then add ginger garlic paste and saute till the raw smell goes, add moong daal and broken rice together sauté for 5 minutes
  2. Add chopped tomato and green chillies, coriander leaves .Saute for 5 minutes just for the tomato to soften , add water and close the lid of the cooker and pressure cook for 5 to 6 whistles.
  3. To the cooked rice add cooked minced meat ,add mint leaves,garam masala and check the water consistency ( it should be like soup ) .Cook for 5 minutes for the minced meat mix well with porridge .Serve hot

Mince meat ( kheema )

Ingredients

  • Mince meat – 250 gms
  • Chopped onion- 3
  • Chopped tomato – 2
  • Coconut paste – 1 big lemon size
  • Oil -4 tbsp
  • Chili powder – 1 tsp
  • Coriander powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Chopped Green chili – 1
  • Chopped coriander – 2 tbsp
  • Salt to taste

Directions

  1. Heat oil add onion ,sauté till light brown add ginger garlic paste and mince meat and salt, cook till all the water dries and oil starts coming out .
  2. Add tomato , green chili and coconut paste along with the spices .Cook till oil starts coming out , add 1/4 cup water and cook in slow flame for 10 minutes add chopped coriander .
  3. This is the kheema ( mince meat ) I use in the kanji , as filling for samosa , puff and also with Ghee rice

Note : you can make minced meat in large quantity and freeze during Ramadan
