As a kid I remember that whenever we went for any South Indian wedding , mom and sis used to love this rice that was served with pappad and used to figure out how this rice is made as it was loaded with so many aromatic flavours ….I saw this recipe posted on Facebook never knew that the magic ingredient that enhanced the flavour was bay leaf along with coconut milk and to my luck , had a school holiday so decided to make this rice along with chettinad chicken for lunch and it was match made in heaven …

We all enjoyed the rice especially Haseeb , mom and dad , they loved the flavours of this pulao and as this rice is mildly spicy it’s taste is well complimented with any spicy curry or with pappad along with curd raita ….This recipe is for sure a keeper for any party

Ingredients

  • Basmati Rice – 1 cup
  • Onion – 1 thinly sliced
  • Chopped Mixed Vegetables- ( Carrot, Beans, Potato & Peas) – 1 Cup
  • Coconut Milk – 3/4 Cup ( grind coconut with 1/4 cup water and strain to get coconut milk )
  • Water – 3/4 cup
  • Butter / Oil – 3 tablespoon ( I used butter )
  • Cinnamon – 1 inch stick
  • Cloves – 4
  • Cardamom – 2
  • Bay Leaf -2
  • Salt to taste
  • Mint Leaves – few ( optional )
  • Chopped Coriander Leaves – For Garnishing

Make paste of

  • Fennel seeds – 1 teaspoon
  • Garlic Cloves – 2
  • Green Chilli – 2 or more if u want it spicy
  • Chopped Ginger – 1 teaspoon

Directions

  1. Wash and soak the rice for 30 minutes and grind and make paste of fennel seeds , garlic , ginger and green chili and set it aside
  2. Heat butter or oil in pan . Add cinnanon, cloves, cardamom, bay leaf and saute for a minute. Then add sliced onions and saute it till its light brown
  3. Add ground spice paste and saute along with onions for a minute . Then add chopped veggies and stir-fry for few minutes till the raw smell of the paste goes .
  4. Drain water from rice and add it to the pan and saute it for few seconds. Add coconut milk and water and stir well. Add salt , mint leaves and mix well.
  5. When the rice cooked , mix gently once and garnish with coriander leaves Serve the aroma rich Brinji Rice with your favourite curry or raita .
