Rainbow salad

Coming back from holidays , back to school and then weight issues have stopped me from cooking new recipes but can’t stop me from thinking about food and new recipes ….. cooking is an stress buster for me and I still search for reasons to cook …. last week  in school we had farmers market and  I saw kids saying different colours of vegetables and one kid said that it was a rainbow market gave me the idea for this salad , came home and made the salad for dinner with a big smile that I can enjoy the salad with less guilt but my gym coach said that I should avoid honey and oil if I am dieting , so made extra without honey and ate it happily 

Haseeb enjoyed the salad especially adding cabbage and capsicum gave an extra crunch to the salad , grapes and pomegranate added flavour to the salad.

Ingredients

  • Boiled corn- 1 cup

  • Sliced cucumber – 1/2 cup

  • Sliced  purple cabbage – 1/2 cup

  • Green cabbage – 1/4 cup 

  • Sliced capscicum – 1/4 cup

  • Pomegranate -1/4 cup

  • Sliced carrot – 1/4 cup

  • Grapes – 1/4 cup

  • Chopped cilantro – 2 tbsp 

Salad Dressing

  • Honey – 1 tbsp 

  • Lemon juice – 2 tbsp 

  • Orange juice – 2 tbsp 

  • Olive oil – 2 tbsp 

  • Salt to taste 

  • Pepper to taste

Directions

  1. In a big bowl add everything, keep it in the fridge.

  2. Make the dressing with the above ingredients and pour it on the salad ,mix well and serve chilled.

Note: You can add any fruit or vegetable of your choice and if you are dieting omit honey and olive oil
